Caleb — I checked out your links to follow your and Christina’s adventure. Having lived overseas a number of times, my reply to “How to pack?” includes taking (1) good knives and (2) a salad spinner for cooking. The salad spinner makes it easy to soak fresh fruits and veggies in a mild bleach solution, and to drain and rinse them in boiled water that has been cooled. Store items in re-closeable plastic bags. This process has kept us healthy and eating well. Praying for you!
